Ingredients: 3 eggs; 150 g sugar; 100 ml mint syrup; 100 ml vegetable oil; 200 ml milk; 250 g all-purpose flour; 100 g desiccated coconut; 16 g baking powder

Method

Tap a step when it is done.

Beat the eggs with the sugar until combined.
Add the mint syrup, vegetable oil and milk and mix well.
Add the flour, desiccated coconut and sifted baking powder and mix until smooth.
Pour the batter into a greased and floured 24 cm cake pan.
Bake in a preheated oven at 180°C (350°F) for about 40 minutes and check with a skewer.
Let the cake cool completely before unmoulding.
