Ingredients: 3 eggs; 150 g sugar; 120 ml vegetable oil; 150 ml cold coffee; 200 g all-purpose flour; 1 packet baking powder; 1 pinch of salt; powdered sugar for decoration

Method

Whisk eggs with sugar until pale and fluffy.
Add oil slowly and pour in the cold coffee, mixing gently.
Sift flour, baking powder and salt, then fold into the mixture from bottom to top.
Pour the batter into a 24 cm pan lined with baking paper.
Bake in a static oven at 180°C (350°F) for 35–40 minutes and check doneness with a toothpick.
Let the cake cool completely before removing it from the pan.
Dust with powdered sugar before serving.
