Ingredients: 4 eggs; 120 g sugar; 100 g flour; 1 teaspoon baking powder; lemon zest to taste (optional); 200 ml whipping cream; 2 tablespoons sugar; 250 g fresh strawberries; 100 g dark chocolate; melted chocolate or powdered sugar to finish

Method

Tap a step when it is done.

Beat eggs and sugar until light and fluffy.
Fold in sifted flour, baking powder and lemon zest.
Spread the batter onto a lined 30x40 cm baking tray and level it.
Bake in a static oven at 180°C (350°F) for 10–12 minutes.
Turn the baked sponge onto a damp cloth, remove the baking paper and roll immediately, then let cool completely.
Whip the cream with sugar until soft peaks form.
Wash and chop the strawberries and melt the chocolate in a bain-marie or microwave.
Unroll the cooled sponge gently, spread the whipped cream, add strawberries and some melted chocolate, then roll again.
Top with melted chocolate or dust with powdered sugar and chill for at least 1 hour before serving.
