Ingredients: 300 g flour; 120 g sugar; 120 g butter; 1 egg; lemon zest; 300 g pastry cream; 300 g fresh strawberries

Method

Mix flour, sugar, butter and egg until a compact shortcrust pastry forms.
Wrap the dough and let it rest in the refrigerator for 30 minutes.
Roll out the dough in a tart pan and bake in a static oven at 180°C (350°F) for about 20 minutes.
Let the tart shell cool completely.
Spread the pastry cream over the cooled base.
Wash and slice the strawberries, then arrange them on top.
Chill the tart in the refrigerator for about 30 minutes before serving.
Brush the strawberries with warm jam or cake glaze for extra shine.
Slice and serve cold.
