Ingredients: 320 g pasta; 2 bell peppers, 1 red and 1 yellow; 1 onion; 2 tbsp extra virgin olive oil; 50 g grated cheese; Salt to taste; Black pepper to taste; Fresh basil to taste

Method

Tap a step when it is done.

Wash the peppers, remove the seeds and membranes, then chop them into pieces.
Slice the onion and sauté it in olive oil until soft.
Add the peppers, season with salt, cover and cook for about 20 minutes until tender.
Blend the cooked peppers with the grated cheese until smooth and creamy.
Cook the pasta in salted boiling water until al dente, reserving a little cooking water before draining.
Return the sauce to the pan, add the pasta and toss with reserved pasta water until creamy, then finish with black pepper, fresh basil and extra grated cheese if desired.
