Ingredients: 2 sheets puff pastry; 500 g spinach (fresh or frozen); 250 g ricotta; 50 g grated Parmesan; 4 eggs; 1 tablespoon olive oil; Salt and pepper to taste

Method

Tap a step when it is done.

Cook the spinach in a pan with olive oil for 5 minutes.
Let the spinach cool and squeeze out excess water.
In a bowl, mix spinach, ricotta, Parmesan, salt and pepper until smooth.
Line a 24 cm pan with one pastry sheet and add the filling.
Make 4 small wells in the filling and crack one egg into each well.
Cover with the second pastry sheet and seal the edges.
Prick the surface with a fork.
Bake in a static oven at 180°C (350°F) for about 40 minutes, until golden.
Let it cool slightly before slicing to keep its shape.
